I rarely like to eat first thing in the morning. I usually start my day by scraping my tongue, maybe swishing with coconut oil, and downing a large glass of warm water with lemon or a splash of coconut water. I rarely am ready for a heavy meal until mid morning. So I often have a little pre-breakfast of stewed apples. I learned this from an Ayurvedic practitioner years ago. Not only are warmed apples easier to digest than cold ones, they contain pectin which is a soluble fiber that improves the environment in our gut, feeds good bacteria, reduces inflammation, and boosts immunity. Stewing the apples makes the pectin even more readily available for our gut bacteria to digest. I start with a small pot on medium heat. I like to cook my apples in ghee as it is rich in antioxidants and fat soluble vitamins like vitamins A, E, and D and can even improve your skin. Then I add spices like Cardamom which activates the secretion of digestive enzymes, Cinnamon which improves digestion and absorption of nutrients, and Ginger which stimulates digestion and is a potent anti inflammatory. Warm the spices until fragrant. Next, add the apples and mix to coat and let them cook for a minute or two. I then add enough water to cover halfway up the apples and let them stew for about ten minutes. Add some raisins too if you’d like. Enjoy.
